Follow the general directions for roasting-at the beginning of this chapter, remembering, not to remove the fell, the thin papery covering from the leg of lamb.
Lamb should be roasted in a slow oven-(300 F.) until the outside is a crisp, golden brown and the meat is plump and juicy, faintly pink in color for medium done light, brown for well done.
Allow 30-35 minutes per pound for roasting lamb
