Fruity Crown Roast Lamb

Ingredients
  Lamb chops 10 (1 Crown Roast Of Lamb)
  Butter 1 Tablespoon
  Onion 1 Small, finely chopped
  Apple 1 , peeled, cored and finely chopped
  Whole meal breadcrumbs 1⁄2 Cup (8 tbs)
  Seedless prunes 1 Cup (16 tbs), chopped
  Walnuts 1⁄4 Cup (4 tbs), chopped
  Chopped parsley 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

1.
Place butter and onion in a Pyrex bowl.
Cook for 1 minute on HIGH.

Add apple, cook for further 1 minute on HIGH.
3.
Stir in breadcrumbs, prunes, walnuts and parsley.
Season with salt and pepper.
4.
Fill centre cavity of crown roast with seasoning.
Shield edges of chops with foil to prevent charring.
5.
Place on a rack.
Cook for 18-20 minutes on MEDIUM (for medium) or 22-25 minutes (for well done).
