Garlic Lamb & New Potatoes
|Lamb loin chops||6 Ounce|
|Garlic||2 Clove (10 gm)|
|Lemon juice||2 Tablespoon|
|Olive oil||1 Tablespoon|
|Black pepper||1 Tablespoon|
|New potatoes||4 Small|
|Black pepper||1⁄2 Teaspoon|
|Non fat cooking spray||1|
Remove any visible fat from the chops and place the chops in a flat glass pan.
Combine the garlic, lemon juice, oil, rosemary and 1 teaspoon of black pepper in a small bowl and pour over the chops.
Cover tightly and marinate in the refrigerator for 2-8 hours.
Scrub the potatoes and slice into 1/4-inch rounds.
Coat the grill with cooking spray and preheat for 5 minutes.
Place the potatoes and mushrooms in the grill and sprinkle with the olive oil, salt and pepper.
Grill for 5 minutes.
Move the potatoes and mushrooms to the sides of the grill and add the lamb chops.
Grill the lamb and vegetables for 4-6 minutes, or until the chops are rare to medium and the potatoes are tender.
