Grilled Lamb Chops With Papaya Peach Salsa
|Lamb loin chops||6 Ounce|
|Black pepper||1 Tablespoon, coarsely ground|
|Ripe papayas||2 Cup (32 tbs), chopped|
|Ripe peaches||1 Cup (16 tbs), chopped|
|Red onion||1 Tablespoon, chopped|
|Cilantro||2 Tablespoon, chopped|
|Lemon juice||1 Tablespoon|
|Non fat cooking spray||1⁄4 Tablespoon|
Remove all visible fat from the chops.
Coat the grill with cooking spray and preheat for 5 minutes.
Place the chops in the grill and sprinkle with the pepper and 1/2 teaspoon of salt.
Grill for 4-6 minutes.
In a medium serving bowl, mix together thoroughly the papayas, peaches, onion, cilantro, lemon juice and 1/2 teaspoon salt.
To serve, place one lamp chop on each plate and cover with the salsa
