Loin Of Lamb With Spinach And Pine Nuts

The loin of lamb with spinach and pine nuts is prepared by rolling the meat up and roasting it. spread with a mix of pine nuts spinach, garlic, pine nuts and breadcrumbs, the loin of lamb with spinach is cooked to a desired doneness in the oven and can be served with mashed potatoes. Adapted from Sharp Microwave and Convection Cookbook.
Ingredients
  Lamb loin 1 Kilogram
  Butter 1 Tablespoon
  Onion 1 Small, finely chopped
  Spinach 1 Bunch (100 gm), cooked and pureed
  Pine nuts 3 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Salt To Taste
  Pepper To Taste
Directions

Place butter and onion in a Pyrex jug; cook for 1 minute on HIGH, 2.
Stir in spinach, pine nuts, garlic and breadcrumbs.
Season with salt and pepper.

Preheat oven to 180°C.

Spread mixture along edge of loin.
Roll loin up and tie tightly with string.
5.
Place on the Low Rack.
Cook on HIGH MIX/ROAST 180°C for 20 minutes (medium) or 25-28 minutes (well done), turning over halfway through cooking.
