Dijon Citrus Lamb Chops
|Lamb loin chops||24 Ounce|
|Dijon mustard||1⁄4 Cup (4 tbs)|
|Orange juice||1 Tablespoon|
|Brown sugar||1 Tablespoon|
|Black pepper||1⁄2 Tablespoon|
|Oranges||2 , peeled and cut into 0.5 inch rings|
|Nonfat cooking spray||1|
Remove any visible fat from the lamb chops.
Lightly coat the grill with cooking spray and preheat for 5 minutes.
In a small bowl, blend the mustard, juice, sugar, pepper and salt.
Place the chops in the grill and cover each with the mustard orange sauce.
Grill for 4-6 minutes, or according to your preference.
Arrange the orange slices on 4 plates and place a lamb chop on top of each.
