Herb Coated Rack Of Lamb
|Lamb rib roast||3 Pound|
|Dijon style mustard||1 Tablespoon|
|Soft bread crumbs||1 Cup (16 tbs)|
|Snipped parsley/4 teaspoons dried parsley flakes||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm)|
Trim fat from roast.
Spread mustard over lamb; place, rib side up, in a 13x9-inch aluminum pan.
Combine bread crumbs, parsley, 1/4 teaspoon salt, and 1/8 teaspoon pepper.
Stir in margarine and garlic.
Pat mixture on meaty side of roast.
Place pan of lamb in center of cooking grill.
Grill 1 to 1 1/4 hours for rare 140 f (60Â°C), 11/4 to 1 1/2 hours for medium 160Â°F (71 Â°C), or 1 1/2 to 13/4 hour for medium-well 170Â°F (77Â°c).
Let stand 15 minutes.
