Orange Lamb Patties
|Lean ground lamb||1 1⁄2 Pound|
|Fine dry bread crumbs||1⁄4 Cup (4 tbs)|
|Ground coriander||1 1⁄2 Teaspoon|
|Grated orange peel||1⁄2 Teaspoon|
|Orange juice||1⁄4 Cup (4 tbs)|
|Soy sauce||2 Tablespoon|
|Salad oil||2 Tablespoon|
Mix together the lamb, crumbs, egg, coriander, orange peel, orange juice, and soy.
Divide the mixture into 6 equal-sized portions and shape into patties about V2 inch thick.
If you saute the patties, heat 2 tablespoons salad oil in a 12-inch frying pan over medium-low heat for 1 minute.
Lay patties in the pan and cook 5 to 6 minutes on each side for medium-well done.
Or, if you broil the patties, place them on a broiler pan about 4 inches from the heat and cook about 5 minutes on each side for medium-well done.
