Casserole of Lamb with Vegetables
|Flour||1⁄4 Cup (4 tbs)|
|White turnip||1 Small|
|Chopped parsley||2 Tablespoon|
|Lean lamb||1 1⁄2 Pound|
|Salt||1 1⁄2 Teaspoon|
Cut lamb in 1-inch cubes.
Combine seasonings and flour.
Toss well with lamb cubes.
Heat shortening in frying pan.
Add lamb, and cook until light brown, stirring 2 or 3 times.
Add onion, and cook until golden, stirring occasionally.
Turn into 2-quart casserole, and add enough boiling water to cover lamb.
Cover, and bake at 350Ã‚Â°F. 70 minutes.
Add potatoes, carrots and turnip, and cook 30 minutes longer or until vegetables are tender.
Garnish with parsley.
