Braised Lamb Shank
|Diced carrots||1 Cup (16 tbs)|
|Diced potatoes||1 Cup (16 tbs)|
|Diced celery||1⁄4 Cup (4 tbs)|
Crack bones in shanks; dredge shanks with flour.
Brown well in hot fat in large skillet.
Add seasonings and 2 cups hot water.
Simmer, covered, for 1 hour and 30 minutes.
Cook for 30 min- utes longer or until vegetables are tender.
