Stir Fried Lamb With Garlic

Ingredients
  Lean lamb steaks/Fillet / boned loin chop meat 12 Ounce, cut into thin slices (350 Grams)
  Dry sherry/Rice wine 2 Teaspoon
  Dark soy sauce 2 Teaspoon
  Light soy sauce 2 Teaspoon
  Sesame oil 1⁄2 Teaspoon
  Oil 2 Teaspoon
  Spring onions 1 1⁄2 Teaspoon, finely chopped
  Garlic 3 Clove (15 gm), peeled and thinly sliced
  Ginger 1⁄2 Teaspoon, finely chopped
Directions

GETTING READY
1. In a bowl put the meat, pour the sherry or rice wine, soy sauces and sesame oil, mix and let the meat marinade for 20 minutes.
2. Drain off the marinade liquid and keep the meat aside.

MAKING
3. In a wok or large frying-pan heat the oil, add the lamb pieces with a little marinade and stir-fry for 2 minutes.
4. To this add the spring onions, garlic and ginger, and continue to stir-fry for another 4 minutes.

SERVING
5. Serve hot with steamed rice.
