Grilled Lamb Chops with Mushrooms
|Sugar||1 Pinch (for tomatoes)|
1 Preheat the grill until really hot.
2 Cut off any excess fat from chops.
3 Rub the chops with salt and pepper.
4 Cut the tomatoes in half and season well.
5 In a kettle, boil some water.
6 In a skillet, melt the fat.
7 Peel the mushrooms and put them in the basin.
8 Reduce the heat of the grill until it is just glowing red.
9 Put grill rack in the lowest position.
10 Put the chops on the rack.
11 Brush with the fat and cook under the grill for 3 mins.
12 Pour the boiling water on to the mushrooms and let them stand for 5 minutes.
13 Drain them thoroughly.
14 Turn the chops, and brush with fat.
15 Put the tomatoes on the grill rack.
16 Brush again with the fat and return grill to heat.
17 Put the mushrooms on the grill rack.
18 Brush them too with melted fat and turn the chops over once again.
19 Transfer the cooked chops ,tomatoes and mushrooms on to a warmed platter and serve them immediately.
