Pimiento Stuffed Lamb

Ingredients
  Lamb leg 9 Pound (1 In Number)
  Olive oil 2 Tablespoon
  Bread crumbs 1 Cup (16 tbs)
  Parsley 1 Cup (16 tbs), finely chopped
  Basil leaf 1 1⁄2 Teaspoon, crumbled
  Rosemary 1⁄2 Teaspoon, crumbled
  Garlic salt 1⁄4 Teaspoon
  Canned pimentos 4 Ounce (1 In Number)
  All purpose flour 1⁄4 Cup (4 tbs), sifted
  Boiling water 1 1⁄2 Cup (24 tbs)
Directions

GETTING READY
1) Get the lamb boned into a butterfly fashion by the butcher

MAKING
2) Place the lamb flat side down and brush with olive oil
3) Into a bowl, mix together the parsley, crumbs, basil, rosemary, garlic salt and pepper
4) Rub the meat with half of the mixture
5) Arrange the pimentos on top of the meat and roll the meat in a jelly roll like fashion
6) Brush the top with more olive oil and pat the remaining crumb mixture onto the meat
7) Once roasted, remove the meat onto a serving platter and allow to rest
8) Drain the drippings from the roasting pan into a measuring jar and allow to rest
9) Skim of the fat and measure 4 tablespoons and return to a pan to heat
10) Add flour to it to blend well and then add some boiling water to thicken and make a sauce

SERVING
11) serve the meat with watercress and a ruffled green onion flower
12) Slice the meat and serve with the gravy
