Leg Of Lamb Neapolitan Style

This Leg of Lamb Neopolitan has always been my personal favorite, ever since I first had it at my graduation farewell. Here's a rather simple recipe for Leg of Lamb Neopolitan for you to try and do let me know how it turns out for you!
Ingredients
  Leg lamb 5 Pound
  Salt 2 Teaspoon
  Crushed oregano 1 Teaspoon
  Onions 4 Medium, chopped
  Green pepper 1 Medium, chopped
  Garlic 1 Clove (5 gm), crushed
  Canned tomatoes 12 Ounce
Directions

Sprinkle lamb with salt and oregano; place on rack in shallow roasting pan.
Bake in moderate oven (325°F.)1 1/2 hours; drain off drippings.
Mix together the onions, green pepper, garlic and tomatoes.
Baste lamb with some of the tomato mixture and bake, basting occasionally, for 1 hour or until meat thermometer registers 175 °F.
for medium "doneness." Add water to sauce if needed during latter part of cooking time.
Serve roast with sauce.
