Leg Of Lamb Neapolitan Style

|Crushed oregano||1 Teaspoon|
|Onions||4 Medium, chopped|
|Green pepper||1 Medium, chopped|
|Garlic||1 Clove (5 gm), crushed|
|Canned tomatoes||12 Ounce|
Sprinkle lamb with salt and oregano; place on rack in shallow roasting pan.
Bake in moderate oven (325°F.)1 1/2 hours; drain off drippings.
Mix together the onions, green pepper, garlic and tomatoes.
Baste lamb with some of the tomato mixture and bake, basting occasionally, for 1 hour or until meat thermometer registers 175 °F.
for medium "doneness." Add water to sauce if needed during latter part of cooking time.
Serve roast with sauce.
