Minted Rack of Lamb

There can be nothing as delicious as this Minted Rack of Lamb. Enjoy this great recipe for Minted Rack of Lamb, as it is also easy to cook!
Ingredients
  Salt To Taste
  Pepper To Taste
  Rack lamb 5 Pound
  Mint jelly 1⁄2 Cup (8 tbs)
  Cinnamon 1⁄4 Teaspoon
  Cloves 1⁄4 Teaspoon
  Applesauce 1 Pound
Directions

Place lamb on rack in shallow roasting pan; sprinkle with salt and pepper.
Bake in moderate oven (325°F) 1 1/2 hours.
Meanwhile, combine jelly, cinnamon and cloves in saucepan; bring to a boil and stir until jelly melts.
Stir 1/4 cup into applesauce; chill.
Drain off lamb drippings; heat remaining mint glaze and brush over lamb.
Bake 30 minutes longer or until meat thermometer registers 175°F.
to 180°F.
(depend- ing upon desired degree of "doneness").
Serve lamb with minted applesauce.
