Indian Spiced Grilled Lamb
|Tandoori spice mix||1 Tablespoon|
|Boneless leg of lamb||1 3⁄4 Pound (1 Piece)|
|Grape tomatoes||1 1⁄2 Cup (24 tbs), halved|
|Plain yogurt||1⁄2 Cup (8 tbs)|
|Chopped fresh mint||1 Tablespoon|
|Freshly ground black pepper||To Taste|
1. Heat a grill pan over medium heat until hot. Sprinkle spice mixture on both sides of lamb and cook over medium heat, turning occasionally, about 20 minutes for medium-rare. Transfer to a cutting board, cover loosely with foil, and let stand 5 minutes.
2. In a small bowl, stir together tomatoes, yogurt, and mint. Season to taste with salt and pepper. To serve, slice meat against the grain on the diagonal into thin slices, arrange on plates, and spoon yogurt mixture over.
