Lamb 'N' Potato Cakes
|Onion||1 Medium, finely chopped to make 1/2 cup|
|Bacon drippings||1⁄4 Cup (4 tbs)|
|Cold cooked lamb||2 Cup (32 tbs), finely chopped|
|Potatoes||3 Medium, peeled, finely chopped|
|Bottled gravy coloring||1 Tablespoon|
In a large frying pan saute onion in 1 tablespoon drippings for 2 to 3 minutes such that softened.
Mix well stirring in lamb, potatoes, egg and catsup season with salt and pepper, if needed.
Make 8 even-size patties out of the mixture and brush each lightly on both sides with gravy coloring.
In same frying pan saute, adding more drippings as needed, such that heated through and well browned.
Serve hot with garnish as desired.
