Spiced Marinated Lamb

Ingredients
  Leg lamb 6 Pound
  Garlic cloves 6 , peeled
  Ginger root 2 Inch, peeled
  Sea salt 2 Teaspoon, grated
  Lemon 1 , grated rind
  Sea salt 2 Teaspoon
  Lemon 1 , juiced
  Grated lemon rind 1
  Cumin powder 1 Teaspoon
  Dried cloves 1 Teaspoon
  Ground turmeric 1⁄2 Teaspoon
  Dried rosemary 1⁄2 Teaspoon
  Natural yoghurt 1 Pint
  Honey 1⁄2 Teaspoon
Directions

GETTING READY
1. Set the oven to 425°F/220°C/Gas 7
2. On the surface of the lamb, make small holes with a skewer

MAKING
3. In a blender, puree garlic, root ginger, sea salt, lemon rind and juice, cumin powder, cloves, turmeric and rosemary
4. Rub this mixture over the lamb and place the lamb in a dish
5. In the blender, add honey and half the yogurt, process ad pour it over the lamb; mix to blend and refrigerate overnight
6. When well refrigerated, cover with a foil and cook in the oven for an hour; remove the cover and cook for another half an hour
7. In the meantime, mix in the rest of the yogurt with the pan juices to make a sauce

SERVING
8. Serve with yogurt sauce alongside
