Deviled Lamb Ribs
|Lamb breast||4 Pound|
|Prepared mustard||1⁄2 Cup (8 tbs)|
|Garlic||4 Clove (20 gm), minced|
|Chopped parsley||1 Tablespoon|
1 Trim any excess fat from the lamb. Cut lamb, if needed, into pieces of 1 or 2 ribs each.
2 In a small saucepan,mix mustard, garlic, and salt.
3 Place ribs on a grill about 10 inches from hot coals; brush with part of the mustard mixture.
4 Grill, turning and brushing several times with remaining mustard mixture, for 1 1/2 hours, or until meat is tender and richly browned.
5 Sprinkle with chopped parsley and garnish with lemon wedges (optional) before serving.
