Stuffed Lamb Chops

Ingredients
  Loin lamb chops 6
  Butter 1 Tablespoon
  Celery 2 Tablespoon
  Bread crumbs 2 Tablespoon
  Lemon rind 1 Teaspoon, grated
  Parsley/Chives 1 Tablespoon, chopped
  Egg yolks/Enough light cream to moisten stuffing 1
  Tomato wedges 2
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1) Make a slit in each chop.
2) For the filling, heat butter and sauté onion in it till it becomes translucent and golden.
3) Mix it with all other ingredients except egg yolk and tomato wedges.
4) Blend with egg yolk.
5) Stuff chops with this filling and broil 3 to 4 inches from heat for 5 to 7 minutes on each side.

SERVING
6) Decorate with tomato wedges and serve at once.
