Trim any fat from the lamb, then cut into 1/2 inch sized cubes. Heat a splash of olive oil in a frying pan then brown the meat. When brown, put to one side. Add a splash of the wine to the pan to deglaze the juices. Add this along with the meat to a hob-safe casserole dish.
Slice the bulb of garlic whole across the middle, then add to the pot.
Seed and slice the peppers, then add these to the meat and garlic.
Season with salt and pepper, then pour over the bottle of wine.
Cover and cook in a pre-heated oven for 1 hour, then uncover and cook for a further 20 minutes or so to reduce the sauce. The lamb should be tender in a beautiful rich sauce - not too much liquid.
Serve with pappardelle and torn basil.
