Stuffed Loin of Lamb

Ingredients
  Lamb loin 3 1⁄2 Pound, boned
  Butter 1 Ounce
  Onion 1 Small, skinned and finely chopped
  Bacon rashers 4 , rinded and chopped
  Fresh white breadcrumbs 6 Ounce (6 Heaped Tablespoon)
  Lemon 1 , rind grated and juiced
  Dried rosemary 1⁄2 Teaspoon (Leveled)
  Egg 1 Small, beaten
  Dripping 3 Tablespoon (To Complete Dish From Freezer, For Roasting)
For sauce
  Onion 1 , skinned and finely sliced
  Plain flour 1 Tablespoon (Leveled)
  Stock 1⁄2 Pint
  Red currant jelly 2 Tablespoon
  Lemon juice 1 Teaspoon (Leveled)
  Salt To Taste
  Freshly ground black pepper To Taste
Directions

GETTING READY
1) Wash and wipe the meat pieces.
2) With a mallet or rolling pin, flatten the meat pieces by gently beating them.

MAKING
3) In a pan, melt the butter and lightly saute the onion with bacon.
4) Mix with breadcrumbs, rind and juice or lemon, beaten egg and rosemary.
5) Season the stuffing slighly with salt and pepper.

FINALIZING
6) Spread the filling over the flatten meat pieces.
7) Roll the pieces and tie with strings.

SERVING
8) Cook just before serving.
