Garlic Flavored Crown Roast Of Lamb

Ingredients
  Crown roast/2 racks of cutlets 1
  Thyme & rosemary 1 Teaspoon
  Garlic 2 Clove (10 gm)
  Oil 4 Tablespoon (For Brushing)
  Mashed potato 1 Cup (16 tbs)
  Grated cheese 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

1. Have the butcher prepare the crown roast allowing 2 cutlets per person.
2. Rub salt and pepper inside and out- of the roast, sprinkle lightly with thyme and rosemary and rub over with the garlic. Brush the outside with oil. Insert a wad of aluminum foil in the center of the crown so that roast retains its shape during cooking. Also .cover the tips of bone with some foil to stop them burning. Place in a baking dish and cook at 350°F (180°C) for 1 hour.
3. Remove the foil from the center of the roast, fill with mashed potato and sprinkle with grated cheese. Return to the oven and cook until the cheese and potato are brown, about 15 minutes. Remove the foil from the tips and if you wish add cutlet frills.
4. Make a gravy from the baking dish and serve with vegetables around the roast.
