Traditional Crown Roast Of Lamb

Ingredients
  Crown roast of lamb 13 Pound
  Sliced celery 1⁄4 Cup (4 tbs)
  Chopped onion 1⁄4 Cup (4 tbs)
  Butter/Margarine 2 Tablespoon
  Cooked rice 3 Cup (48 tbs)
  Orange 1 , peeled, sectioned, chopped
  Grapefruit 1 , peeled, sectioned, chopped
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Ground sage 1⁄4 Teaspoon
  Browning sauce 1⁄4 Cup (4 tbs)
  Orange marmalade 1⁄4 Cup (4 tbs)
Directions

Place roast on microwave-safe roasting rack set in oblong baking dish.
Set Power Select at MEDIUM 10 to 12 minutes.
Let stand, covered, 5 minutes.
Set Power Select at MEDIUM; in medium glass bowl, heat celery, onion and butter 2 1/2 to 3 minutes or until celery is tender.
Stir in rice, orange, grapefruit, salt, pepper and sage; heat 2 to 3 minutes.
Transfer roast to microwave-safe serving platter; gently fill center with stuffing mixture.
Brush outside of roast with browning sauce, then marmalade.
Insert temperature probe into meaty portion of roast, not touching fat or bone.
TO HEAT BY MANUAL TEMP To set temperatures.
TO HEAT BY INSTA-MATIC TEMP Heat on TEMP 1 thru 5 depending on desired degree of doneness.
Let stand, covered, 10 minutes before serving.
