Racks Of Lamb With Sweet Garlic And Herb Crust

Ingredients
  Rack of lamb 2 (6 Cutlets In Each)
  Garlic 2 Clove (10 gm), crushed
  Chopped fresh parsley 2 Tablespoon
  Chopped fresh rosemary 2 Teaspoon
  Chopped fresh chives 2 Teaspoon
  Brown sugar 2 Teaspoon
  Stale breadcrumbs 1⁄2 Cup (8 tbs)
  Chicken stock cube 1 Small, crumbled
  Lemon juice 1 Tablespoon
  Butter 30 Gram, melted
Directions

1.
Using sharp knife, trim away excess fat from outside of racks.
2.
Place racks upright in baking dish, cover each bone with foil.
3.
Combine remaining ingredients in medium bowl, stir until well mixed.
4.
Press crumb mixture firmly onto each rack of lamb.
Bake in moderate oven for about 45 minutes or until cooked as desired.
Stand racks for 5 minutes to make cutting easier.
Serve with vegetables of your choice.
