Spinach Stuffed Lamb

Ingredients
  Boneless leg lamb 5 Pound, rolled and tied
  Curry powder 1 Tablespoon
  Pepper 1 Teaspoon
  Minced fresh garlic 1 Teaspoon
  Ground ginger 1⁄2 Teaspoon
  Fresh spinach 1⁄2 Pound, trimmed, stems removed
For stuffing
  Butter/Margarine 1⁄3 Cup (5.33 tbs)
  Soft raisin bread crumbs 2 Cup (32 tbs) (5 Slices)
  Sliced green onions 1⁄4 Cup (4 tbs)
  Snipped fresh parsley 1 Tablespoon
  Pepper 1⁄4 Teaspoon
Directions

Untie lamb and lay flat on work surface.
Remove any large fat deposits.
In small bowl, combine curry powder, pepper, garlic and ginger.
Mix well.
Rub over inside of lamb surface.
Layer spinach over lamb.
Set aside.
Place butter in small mixing bowl.
Microwave at High for 1 1/2 to 1 3/4 minutes, or until butter melts.
Stir in remaining ingredients.
Spread stuffing mixture over spinach.
Re-roll lamb, enclosing spinach and stuffing.
Tie securely.
Place on roasting rack.
Microwave at High for 8 minutes.
Turn lamb over.
Reduce power to 50% (Medium).
Microwave for 37 to 57 minutes, or until internal temperature in center registers 135 to 140°F for medium doneness, turning lamb over after half the time.
Let stand, tented with foil, for 10 minutes before carving.
