Mint Glazed Lamb
|Leg lamb||5 Pound|
|Crushed rosemary||1 Teaspoon|
|Mint jelly||1⁄2 Cup (8 tbs)|
|Canned pear slices||8 1⁄2 Ounce, drained and mashed, reserve 1 tablespoon syrup (1 Can)|
|Garlic||3 Clove (15 gm)|
Set Power Select at MEDIUM.
Make 6 slits in lamb/insert 1/3 clove garlic in each.
Mix rosemary and pepper; rub over lamb.
Place lamb on microwave-safe roasting rack set in oblong baking dish.
In small glass bowl, combine remaining garlic, finely chopped, jelly and reserved syrup.
Heat 2 to 3 minutes or until melted; stir in pears.
Spoon 1/3 mint glaze over lamb.
Insert temperature probe into meaty portion of lamb not touching bone.
TO HEAT BY MANUAL TEMP To set temperatures.
TO HEAT BY INSTA-MATIC TEMP Heat on TEMP 1 thur 5 depending on desired degree of doneness.
Brush with remaining mint glaze and drain liquid occasionally.
Let stand, covered, 15 minutes before serving.
