Rack Of Lamb With Chimichurri Salsa is an amazing dish with a scrumptious taste. Amelia Ceja prepares rack of lamb with her own version of Argentina's Chimichurri sauce. Try out this wonderful dish and enjoy!
Ingredients
For the sauce:
  Limes 5 Medium, juiced
  Basil 1 Cup (16 tbs)
  Cilantro 1 Cup (16 tbs)
  Rosemary 1⁄2 Cup (8 tbs)
  Garlic cloves 3 Medium
  Black peppers 4 Medium, roast
  Olive oil 1⁄2 Cup (8 tbs)
  Salt To Taste
For the lamb:
  Olive oil 1 Cup (16 tbs)
  Rosemary sprigs 2 Medium
  Thyme sprigs 3 Medium
  Rack lamb 2 Large
Directions

MAKING
1) For the sauce: In a blender, add the lime juice, garlic, black pepper, cilantro, basil, rosemerry, salt and olive oil. Blend well together to prepare the Chimichurri sauce.
2) For the rack of lamb: In a large shallow preheated pan, add the olive oil, galic cloves, few rosemary sprigs and thyme sprigs.
3) Then add the lamb, and cook for 3 minutes on each side. Finish with placing it over an already heated grill for 4 minutes.

SERVING
4) Slice the lamb and plate and dress with the Chimichurri sauce and serve.
