Mint Lamb Chops
|Lamb loin chops||6 , thickly cut|
|Lemon juice||1 Tablespoon|
|Mint jelly||2 Tablespoon|
1. Secure the tails with toothpicks and rub lemon juice into each side and rub in the oil. Let stand for 1 hour. Pop the chops under a pre-heated broiler for about 1 minute to sear each side.
2. Brush the top of the chops with some mint jelly and cook for 3 minutes. Turn and brush the other side with the remaining mint jelly. Cook until done, brushing any melted mint jelly over the chops during the cooking time.
