Crumbed Fried Brains
|Plain flour||2 Tablespoon|
|Egg||1 , lightly beaten|
|Dry breadcrumbs||1⁄3 Cup (5.33 tbs) (From Package)|
|Frying oil||2 Cup (32 tbs) (For Deep Frying)|
Place brains in bowl, cover with cold water, stand 1 hour, drain.
Cut each set of brains in half, as shown; remove detached parts from underneath.
Carefully peel away membrane; using a toothpick makes the task easier.
Place brains into medium saucepan with enough cold water to barely cover the brains, bring to boil, reduce heat, simmer, uncovered, for 2 minutes.
Remove brains from water, drain on absorbent paper.
Toss brains lightly in flour in a plastic bag, dip into egg, then coat firmly with breadcrumbs.
Heat oil in deep medium saucepan.
Deep-fry brains in hot oil for a few minutes or until golden brown, drain on absorbent paper.
Serve immediately with a squeeze of lemon juice, if desired.
