Crown Roast Of Lamb
|Orange marmalade||1⁄4 Cup (4 tbs)|
|Lamb racks||2 3⁄4 Pound, cut and tied into crown roast (2 Pieces)|
|Thinly sliced celery||1⁄4 Cup (4 tbs)|
|Finely chopped onion||1⁄4 Cup (4 tbs)|
|Cooked rice||3 Cup (48 tbs)|
|Orange||1 Small, peeled, sectioned and chopped|
|Grapefruit||1 Small, peeled, sectioned and chopped|
|Ground sage||1⁄8 Teaspoon|
|Browning sauce||1⁄2 Cup (8 tbs)|
In small glass bowl, heat marmalade at medium 1 minute, or until marmalade is melted; set aside.
In oblong baking dish, set roast on microwave oven safe roasting rack.
Heat at medium 10 to 12 minutes.
Let stand, covered, 5 minutes.
Meanwhile, in medium glass bowl, combine celery, onion, and butter.
Heat at medium 2 1/2 to 3 minutes, or until celery is tender.
Stir in rice, orange, grapefruit, salt, sage and pepper.
Heat at medium 2 to 3 minutes.
Transfer roast to microwave oven safe serving platter; gently fill center with stuffing mixture.
Brush outside of roast with browning sauce, then marmalade.
