Baked Lamb Chops And Vegetables

Ingredients
  Lamb/Mutton chops 4 (boned)
  Green pepper 1 , sliced
  Onion 1 Small, sliced
  Tomatoes 2 Large, sliced
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
Directions

1. Start oven, set at Moderate, 375° F.
2. Wipe the chops with a clean, damp cloth. Sear them quickly on both sides in a large hot frying pan.
3. Place chops in a baking dish or leave them in the skillet. Arrange the green pepper, onion and tomatoes over the chops, sprinkling them with salt and pepper. Cover and bake about 40 minutes; remove the cover and cook 10 minutes more.
