Baked Lamb 's Head

Ingredients
  Lamb heads 1 , cleaned and split in half lengthwise
  Potatoes 4 Large, quartered
  Butter 1⁄2 Pound, melted
  Garlic 3 Clove (15 gm), finely chopped
  Chopped fresh parsley 2 Teaspoon
  Fresh bread crumbs 1 1⁄2 Cup (24 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Put the lamb's-head halves cut side up in a buttered shallow ovenproof dish.
Arrange the potatoes around the head, season with salt and pepper, and pour the melted butter over the meat and potatoes.
Bake in a preheated 400° F. [200° C] oven for about two hours, or until the meat is tender and well browned, basting it every 20 minutes with the cooking juices or more melted butter, if necessary.
Mix the garlic, parsley and bread crumbs, and sprinkle the head with the mixture.
Bake the head for a further 10 to 15 minutes, or until the topping is golden brown, basting the meat and potatoes at least once.
