Lamb Chops with Minted Fruit Sauce
|Orange juice||1 Cup (16 tbs)|
|Snipped mint/1/2 teaspoon dried mint, crushed||2 Teaspoon|
|Mixed dried fruit bits||1⁄2 Cup (8 tbs)|
|Lamb loin chops||2 1⁄2 Pound (1 Inch Thick)|
For sauce, in a small saucepan combine sugar, cornstarch, and salt.
Stir in orange juice.
Cook and stir over medium heat till thickened and bubbly.
Stir in mint.
Cook and stir for 2 minutes more.
Remove from heat.
Remove 1/4 cup sauce and set aside.
Stir fruit into remaining sauce; cover and keep warm.
Grill chops on an uncovered grill directly over medium coals for 12 to 15 minutes for medium-rare or till desired doneness, turning chops once and brushing with the 1/4 cup sauce.
Serve chops with the fruit sauce.
Garnish with fresh mint, if desired.
