Lamb Kidney Stew
|Salad oil/Melted fat||4 Tablespoon, melted|
|Minced onion||1⁄2 Cup (8 tbs)|
|Canned tomato juice||2 2⁄3 Cup (42.67 tbs)|
|Pepper||1⁄2 Dash (1 Speck)|
Wash and halve kidneys; then remove thick, white connective tissues.
Cut into quarters.
Dredge with the flour; then saute in the oil with the onion until brown.
Add tomato juice and seasonings, and simmer 10-15 min or until tender.
