Honeyed Lamb Chops
|Lamb loin chops||4|
|Freshly ground black pepper||To Taste|
|Finely chopped mint||15 Milliliter (1 Spoon)|
|Honey||45 Milliliter (3 Spoons, 15 Milliliter Each)|
|Finely grated lemon rind||1⁄2 Teaspoon|
|Lemon slices||4 (For Garnish)|
Trim the lamb and season lightly.
Place in a grill pan and dot with butter.
Cook under a moderate grill for 8 to 10 minutes until well browned.
Turn the chops over and continue for 2 to 3 minutes.
Mix together the mint, honey and lemon rind and spread over the chops.
Continue to cook for 5 to 8 minutes until well browned and cooked through.
Serve with the pan juices spooned over, and garnish with lemon slices, and sprigs of fresh mint, when available.
