Honeyed Lamb Chops

Ingredients
  Lamb loin chops 4
  Salt To Taste
  Freshly ground black pepper To Taste
  Butter 15 Gram
  Finely chopped mint 15 Milliliter (1 Spoon)
  Honey 45 Milliliter (3 Spoons, 15 Milliliter Each)
  Finely grated lemon rind 1⁄2 Teaspoon
  Lemon slices 4 (For Garnish)
Directions

Trim the lamb and season lightly.
Place in a grill pan and dot with butter.
Cook under a moderate grill for 8 to 10 minutes until well browned.
Turn the chops over and continue for 2 to 3 minutes.
Mix together the mint, honey and lemon rind and spread over the chops.
Continue to cook for 5 to 8 minutes until well browned and cooked through.
Serve with the pan juices spooned over, and garnish with lemon slices, and sprigs of fresh mint, when available.
