Marinated Lamb Chops

  Lamb chops 4
  Lemon juice 2 Tablespoon
  Olive oil/Vegetable oil 1 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Fresh oregano/Mint 2 Teaspoon, finely chopped
  Salt 1⁄4 Teaspoon
  Black pepper 1⁄4 Teaspoon

1. With a sharp knife, make several slanting cuts in the rim of fat on the chops. This prevents curling. Place the trimmed chops in a shallow dish.
2. In a small bowl, combine the lemon juice, olive oil, garlic, oregano, salt and pepper, and spoon over the chops. Gover and let them stand for 2 hours, turning the chops occasionally.
3. When ready to cook, preheat the broiler for 5 minutes. Place the marinated chops on the rack of the broiler pan and broil them for 4 or 5 minutes on each side. The marinade tenderizes the meat, so do not overcook. Serve with broiled tomatoes and mashed potatoes.
