Lamb N Potato Cakes
|Onion||1 Medium, finely chopped|
|Bacon drippings||1 Tablespoon|
|Chopped cooked lamb||2 Cup (32 tbs), cooled|
|Potatoes||3 Medium, cooked peeled, finely chopped|
|Gravy coloring||1 Tablespoon (Use A Bottled Variety)|
1. Saute onion in 1 tablespoon drippings in large skillet 2 to 3 minutes, or just until softened.
2. Stir in lamb, potatoes, egg and catsup. Season with salt and pepper, if needed. Mix well.
3. Shape into 8 equal-size patties; brush each lightly on both sides with gravy coloring.
4. Saute in same skillet, adding more drippings as needed, until heated through and well browned.
