Leg Of Lamb With Mint

Ingredients
  Leg of lamb 4 Pound
  Onion 1 Medium, sliced
  Garlic 2 Clove (10 gm), finely chopped
  Salt 1 Teaspoon
  Dried mint leaves 1 Tablespoon
  Pepper 1⁄4 Teaspoon
  Mint sauce 1⁄4 Cup (4 tbs)
Directions

1. Place lamb roast in water-soaked clay pot. Add onion and garlic; sprinkle with seasonings. Cover with water-soaked lid.
2. Microwave for 15 minutes on HIGH. Turn roast over; recover.
3. Microwave for 50 minutes on MEDIUM (Simmer). Turn roast; baste with mint sauce. Recover and continue cooking for 10 to 25 minutes on MEDIUM (Simmer) or until meat is fork tender. Baste with mint sauce occasionally during last 15 minutes of cooking. Let stand, covered, 5 minutes before serving.
