Orange Ginger Lamb Ring With Peas

Ingredients
  Eggs 2 , beaten
  Water 2 Tablespoon
  Quick cooking rolled oats 1⁄2 Cup (8 tbs)
  Onion 1 Small, chopped
  Salt 1⁄2 Teaspoon
  Shredded orange peel 1⁄2 Teaspoon
  Pepper 1 Dash
  Ground lamb 1 Pound
  Frozen peas 10 Ounce (1 Package)
  Frozen onions 1 Cup (16 tbs)
  Frozen orange juice concentrate 1 Tablespoon
  Orange marmalade 2 Tablespoon
  Soy sauce 2 Teaspoon
  Ground ginger 1⁄4 Teaspoon
  Canned mandarin orange 11 Ounce, drained (1 Can)
Directions

In a mixing bowl stir together eggs and 2 tablespoons water.
Stir in oats, chopped onion, salt, orange peel, and pepper.
Add lamb; mix well.
Place a 6-ounce custard cup, open side up, in the center of a 9-inch pie plate.
Shape the meat mixture into a ring around the custard cup.
Cover with waxed paper.
Micro-cook on 100% power (HIGH) for 6 to 8 minutes or till meat is done, rotating the pie plate a quarter-turn every 3 minutes.
Remove custard cup.
Spoon off the fat.
Cover the meat with foil; set aside.
For vegetable mixture, in a mixing bowl combine peas, small whole onions, 2 tablespoons water, and orange juice concentrate.
Cover with clear plastic wrap; vent by leaving a small area unsealed at edge of the bowl.
Micro-cook on 100% power (HIGH) for 5 to 7 minutes or till tender, stirring twice.
Sprinkle with salt and pepper.
Meanwhile, for the glaze, stir together orange marmalade, soy sauce, and ginger.
If desired, transfer meat to a nonmetal serving platter.
Spoon glaze over meat.
Fill center of ring with some of the vegetable mixture.
Arrange mandarin orange sections around outside and on top of meat.
Cover with waxed paper.
Micro-cook on 100% power (HIGH) for 1 to 2 minutes or till heated through.
Pass remaining vegetable mixture.
