Californian Lamb Chops

Ingredients
  Lamb loin chops 16 (1 Inch)
  Salt To Taste
For stuffing
  Butter 1 Tablespoon
  Onion 1 Large, finely chopped
  Garlic 2 Clove (10 gm), finely chopped
  Fresh white breadcrumbs 1 Cup (16 tbs)
  Raisins 1⁄4 Cup (4 tbs)
  Currants 2 Tablespoon
  Oranges 2 , zest grated
  Chopped fresh mint 2 Tablespoon
  Dried thyme 1⁄2 Teaspoon
  Finely chopped fresh parsley 1 Teaspoon
  Freshly ground black pepper To Taste
  Orange 1 , juiced
Directions

To make stuffing, fry onion and garlic in butter until transparent.
Place in a bowl and add remaining stuffing ingredients except orange juice.
Mix, then add orange juice.
Stir.
Cut a pocket in each lamb chop.
Pack stuffing into the cavities.
Fasten chops with skewers.
