1 Australian rack of lamb
2 tablespoons olive oil
1/4 cup chopped fresh mint
2 tablespoons chopped fresh parsley
1 1/2 teaspoons ground gingerby The Joy Kitchen
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon paprika
1. To prepare the paste, place all ingredients in a small bowl and stir to mix.
2. If necessary, trim the lamb, leaving a thin layer of fat on the surface. Pat dry.
3. Rub the spice paste all over the surface of the meat. Refrigerate for 30-60 minutes.
