French Lamb Roast

Ingredients
  Courgettes 2
  Onions 2
  Green pepper 1
  Mushrooms 8 Ounce (225 Gram)
  Tomatoes 4 , peeled
  Garlic 2 Clove (10 gm), crushed
  Chopped parsley 3 Tablespoon
  Salt To Taste
  Freshly ground black pepper To Taste
  Leg lamb 3 1⁄4 Pound (1.5 Kilogram, 1 Whole)
Directions

Wash and trim the courgettes and slice, using the slicing disc.
Peel and quarter the onions, wash the pepper and remove the seeds.
Roughly chop the onions, peppers, mushrooms and tomatoes together, using the double-bladed chopping knife.
Combine this mixture with the courgettes, garlic, parsley and seasoning and use this mixture to cover the base of the roasting tin.
Place the lamb on top, cover and bake in a moderately hot oven (200 C, 400 F, gas 6) for 1 1/4-1 1/2 hours.
