Orange Glaze Leg Of Lamb
|Leg of lamb roast||4 1⁄2 Pound|
|Orange juice||1⁄2 Cup (8 tbs)|
|Orange marmalade||1⁄2 Cup (8 tbs)|
|Ground ginger||2 Teaspoon|
1. Place roast, fat side down on a microwave roasting rack, in 2-quart (12x7) glass baking dish.
2. Microwave on ROAST for 25 minutes. Turn meat over and continue cooking on ROAST for 20 to 25 minutes or until meat thermometer inserted in meat registers 165° F. Pour mixture of orange juice, marmalade and ginger over roast during last 10 minutes of cooking time. Let stand, covered with foil, 10 minutes or until internal temperature reaches 180°F.
