Leg Of Lamb
|Lamb leg||4 1⁄2 Pound (Bone In)|
|Garlic clove||1 Large, cut in thin slices|
Cut small slits in both sides of leg of lamb.
Insert thin slices of garlic in slits.
Place a microwave roasting rack or a saucer upside down in an oblong 2-quart glass baking dish.
Place leg of lamb fat side up on rack.
Microwave, uncovered, for about 20 minutes on high.
Turn leg of lamb over so that fat side is down Microwave, uncovered, for about 20 minutes on high.
Sprinkle lightly with salt and pepper.
Remove from oven and insert thermometer in meat, being sure to not touch the bone. (Thermometer should register 160°).
Leave thermometer in meat and cover tightly with aluminum foil; let stand about 20 minutes or until thermometer registers 180°.
