Rolled Lamb With Cloves Of Garlic

Ingredients
  Garlic 16 Clove (80 gm), unpeeled
  Chopped fresh parsley 2 Tablespoon
  Fresh oregano leaves/3/4 teaspoon dried oregano 2 Teaspoon
  Lamb leg 4 Pound, boned
  Salt 1 1⁄2 Teaspoon
  Pepper 3⁄4 Teaspoon
  Olive oil 1 1⁄2 Tablespoon
Directions

1. Preheat oven to 350°. Bake unpeeled garlic cloves in a small baking pan covered with foil 15 minutes. Peel garlic. Increase oven temperature to 475°.
2. Set lamb on flat work surface, boned side up. Scatter whole garlic cloves, parsley, and oregano over lamb. Season with 1 teaspoon salt and 1/4 teaspoon pepper. Roll up roast and tie at 2-inch intervals. Rub lamb with olive oil. Season with remaining salt and pepper. Place lamb in an open roasting pan.
3. Roast lamb at 475° 15 minutes. Reduce oven temperature to 350° and cook 1 1/4 hours longer, or until lamb is medium-rare.
