Baked Lamb Chops In Zingy Sauce
|Lamb shoulder chops||6|
|Cooking oil||1⁄4 Cup (4 tbs)|
|Chopped shallots||1⁄4 Cup (4 tbs)|
|Tomatoes||2 , peeled seeded and chopped|
|Red wine vinegar||2 Tablespoon|
|Chopped basil||1 Tablespoon|
|Grated ginger||2 Teaspoon|
|Dry vermouth||1⁄4 Cup (4 tbs)|
Season chops with salt and pepper.
Place oil in a large skillet.
Brown chops in hot oil, 2-3 minutes on each side.
Remove and place in 13-by-9-by-2-inch baking pan.
Meanwhile, combine remaining ingredients in the same skillet.
Stir around with a wooden spatula for 2 minutes.
Pour over chops.
Bake at 375° F for 30-40 minutes or until chops are tender, basting meat with sauce occasionally.
