Lamb Chops In Puff Pastry

Ingredients
  Flaky pastry 1⁄2 Pound
  Butter 2 Tablespoon
  Shallots 3 , minced
  Canned sliced mushrooms 1⁄2 Cup (8 tbs), drained
  Ham slices 2 , cut into thin strips
  Tomato paste 1 Teaspoon
  Lamb chops 4 , trimmed
  Cognac 1⁄2 Ounce, heated
  Egg 1 , beaten
  Salt To Taste
  Pepper To Taste
Directions

Preheat oven to 400 °F (205 °C).
Roll out pastry dough.
Cut into 4 squares.
Set aside.
In a frying pan, melt half the butter.
Lightly cook shallots, mushrooms and ham.
Mix in tomato paste, salt and pepper.
Set aside.
In a skillet, melt remaining butter.
Sear lamb chops on both sides.
Sprinkle with cognac.
Flambe.
Place each lamb chop on a pastry square.
Top with ham stuffing.
Seal in pastry, leaving bone tips uncovered.
Brush with beaten egg.
Cook in oven 12 minutes or until dough turns golden brown.
