Roast Baby Lamb's Head

Ingredients
  Baby lamb's head 1 , split in half and tied with a string to keep brains intact (1 Head Per Serving)
  Lemon 1 , juiced
  Olive oil 2 Tablespoon
  Oregano 1 Tablespoon (More To Taste)
  Salt To Taste
  Pepper To Taste
Directions

1. Soak head in cold salted water for 1 hour. Drain. Pat dry. Cut string and place halves in a shallow pan, brains up.
2. Combine lemon juice, olive oil, oregano, salt, and pepper. Drizzle over head.
3. Roast in a 350°F oven for about 20 minutes, basting frequently until brains are tender. Remove brains with a spoon and keep warm. Continue roasting about 45 minutes more, or until other parts are tender.
