Lamb Shank In Parchment Paper
|Garlic||1 Clove (5 gm), peeled and slivered|
|Hard mizithra cheese slice||1|
|Onion||1 Small, sliced|
|Tomato||1 Small, peeled|
|Minced parsley||1 Teaspoon|
|Mint flakes||1⁄4 Teaspoon|
|Lemon||1⁄2 , juiced|
|Olive oil||1 Teaspoon|
1. Make several incisions in the meat, top and bottom. Insert sliver of garlic in each incision.
2. Place meat on a piece of parchment paper ample enough to seal meat and vegetables securely. Put cheese on meat, then arrange onion and tomato on top. Sprinkle with herbs, lemon juice, salt, and pepper. Drizzle with olive oil.
3. Wrap securely in parchment paper. Tie with string. Set in a roasting pan.
4. Bake at 350°F about 1 1/2 hours, or until meat is done.
